Elle consiste en la transformation d&#8217;une mol\u00e9cule de glucose (ou un autre sucre fermentescible) en deux mol\u00e9cules d&#8217;acide pyruvique qui sont ensuite r\u00e9duits \u00e0 l&#8217;acide lactique avec un rendement \u00e9nerg\u00e9tique faible. Cette voie est appel\u00e9e ainsi gr\u00e2ce au produit final principal, mais il est aussi appel\u00e9 homolactique pour la distinguer de l&#8217;h\u00e9t\u00e9rolactique qui utilise un m\u00e9canisme diff\u00e9rent.<\/p>\n<p>La fermentation lactique se trouve principalement dans les lactobacilles et ana\u00e9robie du m\u00e9tabolisme de certains tissus (muscle) des organismes multicellulaires, et se retrouve \u00e9galement dans le vagin et dans le tractus gastro-intestinal humain, o\u00f9 il assume un r\u00f4le tr\u00e8s important pour pousser une partie pour examiner la lactobacilles probiotiques.<\/p>\n<p>La fermentation lactique est une cause de la carie dentaire, et il est impliqu\u00e9 dans la pr\u00e9paration de nombreux aliments, y compris, par exemple, le yogourt, le k\u00e9fir, les c\u00e2pres et la choucroute.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>LES PROBIOTIQUES \/ FERMENTS LACTIQUES.
